Oatmeal Lace Cookies and Fika

Dear Reader,

During our visit to Sweden last Summer we were introduced to the custom of Fika. What is Fika? You might ask. Well, I shall tell you. Fika is coffee with company and conversation. It is not grabbing a to-go cup of chain-espresso on your way to doing something very important in your very busy life. Fika is an opportunity to slow down, take in the atmosphere with someone you care to spend time with, preferably with something scrummy to munch on the side. It is about intimacy and intentionality. Not to mention it goes perfectly with the whole Hygge craze.

Gluten Free Oatmeal Lace Cookie Recipe

3 cups of rolled oats

1 1/2 sticks of salted butter

1 3/4 cup brown sugar

1 tsp vanilla extract

1 tsp ground cinnamon

2 beaten eggs

Preheat oven to 350 F. On the stove-top melt the butter in a large sauce pan over medium heat. Then stir in all the other ingredients and mix well, the eggs at the very end and remove from heat.

Spoon out tbsp fulls of batter onto parchment-covered cookie sheets. Flatten batter with back of spoon or fingers into little pancakes. Should make about 24 small cookies.

Cook for 13-15 min. Cool. Enjoy with coffee.
