Comte and Olive Summer Salad

I have to admit that I stole this recipe from a good friend. I hope she can forgive me because it is just too good not to share! She is one of those people who make cooking look so effortless. A true inspiration.

Now all you need is the bread and wine!

In the summertime (and whenever possible) I try not to cook. I love food. I love to eat at home, but if there is an easy way out at the end of a long hot day with two energetic kids, I will opt for that simpler choice.

Salad Recipe

Fresh chopped romiane

Grape tomatoes halved

Kalamata olives

Comte cheese cubed

Dijon Vinaigrette 

1/2 cup olive oil

1/2 apple cider vinegar

4 tbsp dijon mustard

2 tbsp raw honey
