Banana Flambe Cake
3 cups (Bob’s Red Mill 1:1 Gluten Free) All Purpose Flour
2 tsp baking powder
½ tsp salt
1/2 cup butter, softened
1 cup granulated sugar
2 large eggs, room temp
2 small bananas (mashed)
1 cup milk
2 oz rum
1 tsp vanilla extract
Preheat oven to 350. Grease 10 ” bundt pan.
Whisk together flour, baking powder and salt in a large bowl. Separately, mix together rum, milk, and vanilla extract, sugar, banana, and eggs added (last) into stand mixer. Slowly add dry ingredients while mixing on low to medium speed.
Pour batter into bundt. Bake cake for 50 to 60 minutes, or until a tooth pick inserted in the center comes out clean.
Cool to room tempt and add icing and bananas flambe. Serve with ice cream or alone, but definitely with more rum.
Whisk together 1 cup powdered sugar. 1 tsp vanilla extract. 2 tbsp milk.
2 tablespoon butter
1/3 cup brown sugar
2 bananas, sliced into rounds
1/3 cup rum
Melt the butter over medium heat in a small frying pan. Add brown sugar and stir until smooth. Turn up the heat to high and add the bananas. When the mixture starts bubbling, remove pan from heat and pour in rum, quickly return to heat, tilting a bit to allow the mixture to catch on fire! My favorite part (and sorry I did not get a photo of this-was tricky to ignite things and take photographs at the same time). After flame dies turn off heat and place atop cake.
