I love everything about these cookies. The aroma while I am baking them. The simplicity of the recipe, and of course how wonderful they taste with a cup of coffee or milk.

Sugar & Spice Cookie Recipe0

2 1/2 cups gluten free all purpose flour (I use Bob’s Red Mill 1:1)

1/2 tsp baking soda

1/2 ground cinnamon

1/4 ground nutmeg

1/2 ground cardamom

2 sticks (1 cup) salted butter (softened)

1 cup brown sugar

1/2 cup granulated sugar

1 tsp vanilla extract

2 eggs

Preheat oven to 375 deg F. Prepare greased cookie sheet.

In a large bowl, whisk together flour, baking soda, and spices.

In a separate large bowl or stand mixer, cream butter, sugar, vanilla, and lastly eggs only smooth.

Slowly add dry mix to cream mixture and mix until incorporated.

Use a spoon to measure out dough and form into small balls in your hands. Place about a dozen balls per baking sheet, and flatten down slowly until balls look like fat disks.

Bake for 13 min or until light golden brown. Allow to cool and serve with coffee for a delightful fika.
